what's the best way of isolating the video of the actual keyboard and your hands from the surroundings? Is using "green screen" material the only way or is there a better way? And if so, how do you remove the green colour in the Seemusic app?

This is not a Technical Support issue for the app... If you record on a black background, you can use the Video Settings Brightness control to turn down the brightness on the footage, and subsequently make the background look black. My most recent videos on the SeeMusic Piano Youtube channel do not use any chroma keying, they are recorded with a dark background and the brightness lowered, all of which can be done in app.
SeeMusic can't possibly provide a chroma key option for green screen footage - this is a processor intensive, highly specialized feature of commercial video editor applications. You'll need to use an application like Final Cut X or Adobe Premiere if you want to do chroma keying. You can then export and import the chroma keyed footage into SeeMusic if you want.
