1. Can I import two separate midi files for left hand and right hand and then assign a colour to each?
2. If not how can I accurately separate the right hand and left hand parts with colours as they overlap so the divide functin doesn't wotk?
3. What are the tracks and channels buttons for on the colour window?

You cannot import two separate MIDI files and then combine them in SeeMusic - you would need to do that in an external MIDI editor
You can accurately separate the hands in SeeMusic by importing all the notes as one MIDI file. Open the MIDI Editor - the pencil icon in the middle of the right hand side of the main screen. Select groups of notes, then click either the "1" or "2" button to assign them to a Track. Make sure you have the "Track" color mode enabled so you can see which notes are assigned to which track.
The Track button in color colors the notes by tracks. The Channels mode colors the notes by channel. The track mode is more standard to use, but some users use channels instead, which is why that option is available. In this case, keep "Track" selected in the Color window.
